Soups


This is delicious and is great for "tomato haters" since I have experienced it myself and have come to like tomatoes more and more from this soup.  It is a very easy recipe with only 4 steps, and can even be made into a pasta if you leave the tomatoes whole.  Tomatoes are extremely healthy for you and contain lots of water that keep you hydrated and your skin healthy and in ship shape.

Tomato Soup makes 2-3 servings

Ingredients 


  • 2x 400g tins of chopped tomatoes
  • 2 cloves of garlic, chopped finely
  • 1 tbsp mixed Italian herbs
  • a glug of extra virgin olive oil
  • 2 tsp sugar (to minimize the sharpness of the tomatoes)
  • 125 ml cream
  • a splash of balsamamic vinegar
  • salt and pepper
Method


  1. Fry the garlic in a medium sized pot on a medium heat for about 1 min (be careful not to burn it as it will make the soup bitter).
  2. Next, add the tomatoes into the pot along with the herbs, salt and pepper, and balsamic vinegar and stir.
  3. Lower the heat and leave to simmer for 20 min, stirring every now and then.
  4. Blend and add cream.
